Simple Classic Banana Muffins

 


Ingredients
:

  • 4 ripe bananas
  • 2 eggs
  • 2/3 cup maple syrup
  • 1 tsp vanilla extract
  • 3/4 cup of melted butter
  • ½ cup Greek yogurt
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • a pinch of salt

Instructions:

  • Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or a muffin tin
  • In a large bowl, mash the bananas. Add eggs, maple syrup, vanilla, melted butter, and Greek yogurt. Mix well to combine.
  • Add the flour, baking soda, baking powder, and salt. Stir until just combined—do not overmix.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean and they look golden brown
  • Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Make about 15 muffins
