Ingredients:
- 4 ripe bananas
- 2 eggs
- 2/3 cup maple syrup
- 1 tsp vanilla extract
- 3/4 cup of melted butter
- ½ cup Greek yogurt
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- a pinch of salt
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or a muffin tin
- In a large bowl, mash the bananas. Add eggs, maple syrup, vanilla, melted butter, and Greek yogurt. Mix well to combine.
- Add the flour, baking soda, baking powder, and salt. Stir until just combined—do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean and they look golden brown
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
